We are registered dietitians specializing in the nutrition treatment of adults and adolescents with eating disorders and their nutrition-related sequelae. Joleen and her staff will work with your outpatient team (therapist, psychiatrist, medical provider) to offer a unique individualized, whole-person, medically-informed approach. Based out of Oklahoma, we see clients in-person at our office located in South Tulsa. Telehealth services using HIPAA-compliant real time video is offered to out of state clients in which Joleen holds a license or has permission to practice dietetics.

Our passion is offering care for those with limited access to eating disorder providers in their area and to walk alongside them in their recovery transformation from beginning to end.

This may include new services for those who are “sick” of their eating disorder but struggle with the ambivalence inherent to recovery, for those who have “been there done that” and feel like giving up, maybe having been in treatment multiple times and find themselves repeating engrained behaviors and habits upon returning home, for those whose eating disorder originated early in life and perhaps were victims of trauma and used their eating to manage their feelings of overwhelm, for those who are skeptical that recovery exists for them and are held hostage by their thoughts and behaviors, for those parents or support persons who simply need guidance with how to support their loved one whose at struggle, and for those who have a strong desire to live wholeheartedly again but just are not sure where to start or who need a judgement-free someone to bear witness to their story, their vulnerability, and their humanity as they tackle the great journey of recovery.

Joleen Wilson, RD/LD, CNSC

I’m a Registered Dietitian (RD) in practice since 2008. I have 10 years of experience working with eating disorders throughout all levels of care. My approach includes principles from Intuitive Eating, Health at Every Size (HAES), and disengaging with diet culture. My own journey to eating disorder recovery combined with knowledge of the medical complications of eating disorders allow me to treat those with eating disorders and disordered eating from a compassionate, non-judgemental, and intuitive point of view.

The dietetics profession is often mystified and poorly understood. Dietitians, including myself, are traditionally trained in the weight-normative paradigm and thought to focus on health and weight loss with their clients almost exclusively. After much research and collaboration with other non-diet dietitians and professionals, the most ethical approach in my mind and for my practice centers around a weight-inclusive paradigm that will honor food preferences, size-acceptance, and encourage joyful movement, if desired by the patient. I take a step-wise approach to determine what’s “really going on” in terms of issues with food and body size and I learn the values, core beliefs, and goals that are important to my client. I then empower my client to once again begin to live the life they want to live that is in connection with their values by also addressing eating disordered behaviors, nutrition habits, beliefs, and (possibly) deep-rooted insecurities about food, body size, and shape.

Biography

Joleen received her Bachelor’s of Science in Dietetics from Kansas State University.  She completed her dietetic internship at the Hines Veterans Affairs Medical Center near Chicago, Illinois.  Her first position was a critical care dietitian at the Richard L. Roudebush VA Hospital in Indianapolis, Indiana where she also obtained a certification as a Certified Nutrition Support Clinician which includes a specialty in critical care, enteral, and parenteral nutrition. She completed research studies and abstract presentations involving appropriate use of parenteral and enteral nutrition in critically ill and mechanically ventilated patients. Joleen has also held positions as a clinical dietitian where she practiced on acute care medical/surgical wards as well as a rehabilitation and polytrauma ward.

Joleen moved to Tulsa in 2012 and obtained a position as a long term care dietitian and a pediatric dietitian caring for cystic fibrosis patients. In 2014, she obtained a position as the Director of Nutrition and Food Service at Brookhaven Hospital. For over four years, she worked closely with psychiatrists, internal medicine physicians, nurses, and therapists to care for eating disorder patients as well as those struggling with mental illness, chemical dependency, and brain injury. She currently works part time as a nutrition consultant for Nutrition Management Services, directing nutrition care in a variety of settings.

In 2017, Joleen opened her private practice, RestorED Nutrition Therapy, where she she and her team see patients across the spectrum of eating disorders via Telehealth in several midwestern states. Other counseling interests include PCOS (polycystic ovarian syndrome), nutrition support (home tube feeding or parenteral nutrition), nutrition and chemical dependency, diabetes, and geriatric nutrition.
